Homemade Polish Kolaczki

1 8 Oz. cream cheese
12 Oz of softened butter
3 cups all-purpose flour

Any filling from solo brand filling. Apricot. Prune, Strawberry etc
You can also take 8 Oz cream cheese softened
1 teaspoon vanilla
1 cup powered sugar (to your taste)
This can also be used as one of the fillings

For cookies:
Mix cream cheese, butter together until light and fluffy. Add 1 cup of flour at a time and mix well. Wrap dough in plastic wrap and refrigerate 1 hour.
Preheat the oven to 350 degrees. Roll out the dough onto a surface that has been dusted with granulated sugar and confection sugar, This is so the dough doesn’t stick to the surface. Cut into 2″ squares ( I use a ruler and pizza cutter) place 1/2 to 1 teaspoon of any filling (do not use pie fillings it’s too runny) to each squares. Overlap opposite corners on each square and pinch. Depending on oven, Bake 10-15 minutes. Light brown on corners. Cool and dust with powered sugar. Place into an airtight container and place 1 piece of white bread into the container; this keeps any cookie soft. Replace bread every day or every other day when bread becomes dried out. I use cheap off-brand white bread. Only white bread to be used, and don’t use heels. Enjoy!!!!
