Homemade Polish Kolaczki
1 8 Oz cream cheese
12 Oz of softened butter
3 cups all purpose flour
Any filling from solo brand filling. Apricot. Prune, Strawberry etc
You can also take 8 Oz cream cheese softened
1 teaspoon vanilla
1 cup powered sugar ( go to your taste)
This can also be used as one of the fillings
For cookies:
Mix cream cheese, butter together until light and fluffy. Add 1 cup of flour at a time and mix well. Wrap dough in plastic wrap and refrigerate 1 hour.
Preheat oven to 350 degrees. Roll out dough onto a surface that has Been dusted with granulated sugar and confection sugar, this is so dough doesn't stick to surface. Cut into 2" squares, ( I use ruler and pizza cutter) place 1/2 to 1 teaspoon of any filling (do not use pie fillings it's too runny) to each squares. Overlap opposite corner on each square and pinch. Depending on oven Bake 10-15 minutes. Light brown on corners. Cool and dust with powered sugar. Place into airtight container and place 1 piece of white bread into container, this keeps any cookie soft. Replace bread every day or every other day when bread becomes dried out. I use cheap off brand white bread. Only white bread to be used and don't use heals. ENJOY!!!!
